Komunitas Bakery Indonesia yth,

Pada tanggal 12 Juni 2008 telah diluncurkan secara resmi majalah satu-satunya dan pertama di Indonesia yang berfokus pada trend dan bisnis usaha bakery yaitu Majalah Bakery Indonesia.

Peluncuran majalah Bakery Indonesia di Kafe Galeri Taman Ismail Marzuki Jakarta Pusat, dihadiri oleh berbagai media pers dan para pengusaha bakery maupun para pengusaha bahan dan mesin-mesin pembuat roti dan kue.

Untuk memeriahkan suasana peluncuran dilaksanakan talkshow yang menampilkan Thomas Darmawan selaku Ketua GAPMMI, Jahja Angkawidjaja pengusaha Maxim Bakery dan Avanti Fontana PhD, pengajar di MM UI dan Innovation Coach. Mereka membagikan ilmu, pengetahuan, data dan kiat dalam melalui tantangan usaha bakery yang cukup berat di tahun 2008 ini.

MISO SOUP
YANG LEZAT NAN BERGIZI
Sejarah Miso dan Perkembangannya

Pada khasanah makanan Jepang, sup miso merupakan salah satu hidangan wajib yang disajikan pada saat sarapan, atau sebagai makanan pembuka (appetizer) di kala santap siang dan santap malam. Bahan dasarnya adalah miso yang terbuat dari pasta kacang kedelai hasil fermentasi. Menurut cerita, miso hadir di Jepang berasal dari Cina.

Pada awalnya, miso hanya disajikan sebagai makanan utama oleh para biksu Budha dan para bangsawan. Namun pada periode Nara (710 – 784 M). Belakangan pada Jaman Muromachi (1392 – 1573), berkembang menjadi hidangan yang populer bagi kalangan kebanyakan.
Pada abad ke 17, produksi industri yang massal untuk miso dimulailah.
Perkembangan miso selanjutnya adalah berupa variasi dari miso dasar yang ada menjadi miso yang menyesuaikan dengan daerah dimana miso itu berada. Hal ini terjadi karena ketergantungan pada bahan baku yang ada di daerah setempat, kondisi cuaca dan iklim serta kebiasaan makan pada tiap daerah.
Akibatnya, hadir berbagai ragam miso seperti shiromiso yang berasal dari Kyoto, hatchomiso yang berasal dari Propinsi Aichi dan sekitarnya, juga miso Shinshu yang dibuat di Propinsi Nagano. Miso Shinsu merupakan hidangan miso yang paling banyak disajikan saat ini.
Saat ini ada sekitar 1300 pabrik penghasil miso di Jepang, dan mereka menghasilkan 520.000 ton miso setahunnya. Sebagian besar dikonsumsi di Jepang dan hanya sekitar 6.200 ton saja yang diekspor. Konsumsi per kapita miso di Jepang adalah 4,1 kg (dalam bentuk pasta, kalau dibuat sup maka beratnya bertambah karena adanya air kuah).

Tipe dan Klasifikasi Miso
Ada beragam miso dan ada beragam cara juga untuk mengklasifikasikan miso.
Yang paling mudah untuk klasifikasi tersebut adalah dengan mengetahui apa materi pembuatnya. Beragam miso meliputi yang dibuat dari beras, barley dan kedelai. Kedelai dan garam merupakan bahan utama untuk berbagai miso. Saat beras yang difermentasi ditambahkan pada pembuatan miso, dia berubah menjadi miso kome dan dengan cara yang sama, saat fermentasi barley ditambhakn, maka dia disebut dengan mugi miso. Untuk miso mame adalah kedelai yg difermentasi.
Walaupun 80% miso di Jepang adalah miso kome, namun mereka berbeda dalam rasa dan warnanya, dan bervariasi bergantung pada area dimana dibuat, seperti rasa manisnya, asinnya, warna merah dan putihnya.

Miso Sebagai Makanan Yang Sehat
Miso dapat berfungsi sebagai anti kanker dan telah diangkat fungsi tersebut beberapa tahun belakangan ini. Ini merupakan hasil studi epidemiologi pada tahun 1981 yang menunjukkan bahwa miso dapat membantu penyembuhan kanker di perut dan konsumsi miso secara konstan pada hewan dapat membantu mereka melawan kanker liver.
Percobaan pada hewan juga menunjukkan bahwa ekstrak miso utamanya protein dan gula, bekerja menurunkan tekanan darah. Sehingga, makan miso secara konstan direkomendasikan untuk menambah asupan kalsium dan magnesium yang membantu melawan tekanan darah tinggi.
Bahan kedelai pada miso, dianggap efektif untuk menurunkan kolestrol dan tidak berubah kemampuannya walaupun diproses menjadi miso. Secara medis telah dikonfirmasi bahwa SSMP-saponin, yang merupakan pembentuk utama kedelai, mengurangi oksigen aktif yang menyebabkan penyakit dan penuaan. Miso, bersama dengan shoyu (kecap kedelai) dan natto (kedelai fermentasi), merupakan bahan makanan anti alergi.
